Planting herbes and grapes alongside old olive trees offers multiple advantages. The deep roots of these mature trees contribute to enhancing soil structure and preventing erosion. Moreover, the shade provided by the trees serves as a natural shield, safeguarding the herbes and grapes from excessive sunlight.
Today, these centuries-old olive trees, ranging from several hundred to over a thousand years old, provide valuable shade and wind protection to the delicate grapevines. This allows for balanced ripening and preserves their distinctive flavours. The herbs, such as rosemary, thyme, and lavender, not only added aromatic charm but also acted as natural pest repellents and soil enhancers.
As a farmer committed to sustainable practices, I have embraced an ecological approach to agriculture that prioritizes the rhythm of nature over invasive methods.
